Cozy up in your PJs and gobble some delish spicy porridge on a frosty autumn morning. Healthy, yum and CHEAP! :)
Spicy Porridge with apple, coconut and ginger
| You Will Need: | Method: |

1 cups of rolled oats 1 cup of milk/soymilk 1 cup water 1 red apple, grated 1cm of peel ginger, grated ½ teaspoon of powdered cinnamon 2 tablespoons of dessicated coconut Half a cup of milk for serving 1 pinch of Salt (to taste) 1-2 tbsn brown sugar (to taste) 1 tablespoon of walnuts, sunflower seeds or crushed peanuts (optional) |
Pop the oats, milk and water in a saucepan and simmer, stirring continuously until mixture thickens (about 5 min) Add the grated apple, cinnamon, ginger and coconut and salt (if adding) cook for a further 2 min or until desired consistency. Slowly add more milk or water if drying out. Serve with a dash of milk, sprinkle with brown sugar (or honey). Sprinkle some nuts on top for texture (and protein). Yum! |
