I can’t believe it’s been a year since jumping onto the helm of Regret Nothing. And what a year it was!

We sadly bade farewell to Tom Shearman (sometimes Superannuation Man) and launched the Super Program complete with spandex clad super hero and a love child. We were finalists for an ASFA award for Best Use of Social Media and were featured in the Sydney Morning Herald, The Age, and the Penrith Weekender. Plus I was interviewed on Eaglewaves Radio and the Foxtel’s Chatterbox program to talk about Regret Nothing and all its offerings. Not to mention all the inspiring interviews as part of Global Entrepreneurship Week.

Also, hot off the press, keep your eye out for the current edition of Cleo Magazine (January edition) as I collaborated on an article called ’48 Bucks 48 Hours’. It’s in newsagencies now and a great issue with lots of fab articles.

So if you missed my first ever TV interview I thought I’d share it with you here.

I’ve also imparted some tips for those of you thinking to take advantage of 50 year low interest rates and invest in property: Your Bit of Earth.

Because this time of year is often the most fun but also the most intense, stressful and busy, I put together a lil’ reminder to pause amid the panic: Stay still and Chill. Find some YOU time so you are fresh for the New Year and ready to set some exciting goals for 2013. Speaking of 2013, I’ve been asked to stick around for another year. Yay! So here’s to an awesome 2013. I will be doing my very best to keep things fun and interesting.

No one wants to slave over a hot stove on a hot summer’s day. Here is a super easy treat to share with your loved ones. Not sickly sweet, rich in protein and healthy fats, the perfect snack to go with your favourite people, some time off and maybe an icy celebratory beverage.

Spicy Choc Rum Balls

You Will Need: Method:
  • 2/3 cup of raw almonds
  • 2/3 cup of walnuts
  • 1 cup of dried pitted dates
  • 1 cup of dried apricots
  • 1 tablespoons of extra virgin coconut oil
  • 1 tablespoon of cocoa or cacao (raw cocoa) powder
  • 1 tablespoon of carob powder
  • 1 tablespoon of fresh orange juice
  • Half a teaspoon of cinnamon
  • 1 teaspoon of very fine orange zest
  • Half a teaspoon of nutmeg
  • 1 tablespoon of brandy or rum (optional)
  • 1/2 cup of desiccated coconut
  • A strong blender or food processor, a sheet of baking paper, flat surface for rolling
  • Combine the dried ingredients (keeping aside the coconut for the end) into the food processor and process until finely chunky.
  • Next add the coconut oil, orange juice and rum (or brandy) if adding.
  • Turn on the processor again until all the ingredients are thoroughly combined and the mixture is sticky enough to roll into a ball. If the mixture is too dry add another teaspoon or 2 of coconut oil. If it's not dry enough add another small handful of nuts or seeds.
  • Once you’re happy with the consistency roll into balls and then roll into coconut to coat.
  • Place on a sheet of baking paper and place in the fridge to harden for an hour.
  • Then place into a bowl to serve or an airtight container to keep fresh for up to a week.
